After ordering them I decided to look up the nutritional information and was blown away by the amount of added ingredients they contained. Now this is not to say they aren’t a good choice or a healthy option, because they’re much better than the Iced Lemon Loaf Cake, which contains 470 calories and 68g of carbs. If you’re on the go and need to grab something quick, Egg White Bites are by all means a great option. However, if you have the choice of making them at home versus picking them up at the nearest Starbucks, I’d opt for making them yourself. Aside from saving money and a few calories, you can get creative and make these your own by adding pretty much anything you have on hand!
Egg white bites are easy to make in advance and can be a quick grab and go breakfast item (or snack) to start adding into your diet!
For the sake of simplicity, I only made one kind. However, please play around with these and add whatever ingredients you prefer.
Ingredients (for 12 egg white bites)
- 12 eggs
- ¾ c chopped broccoli
- ¾ c chopped mushrooms
- 6 TBSP Fat Free Feta Cheese
- 1 c fresh spinach
- Garlic Powder
- Red Hot Pepper Flakes
Directions:
Preheat the oven to 350 degrees and spray a non-stick 12-cup muffin pan with cooking spray.
Crack open an egg on top of the muffin pan and shift back and forth to leave only the egg white dropping into the muffin cup. In each individual cup, add in 1 Tbsp. chopped broccoli, 1 Tbsp. chopped mushrooms, ½ Tbsp. fat free Feta cheese, dash garlic powder, and a dash of red hot pepper flakes. Then cover each with a layer of spinach.
Place in oven and bake for 22-24 minutes or until egg mixture is puffed and cooked through. Let cool for about 2 minutes and use a knife to slide around the edges to pop the egg bites out. Serve immediately or store in the refrigerator to enjoy at a later time!
Optional: Top with avocado and salsa 🙂
